Bar Tartine, San FranciscoNo one knows this, but the chef, Nicolaus Balla, is almost Hungarian.  Born in Michigan, spending his (quite influential) high school years in Budapest, then and travelling the globe, Balla brings his amazing down home cooking with an European flair.  I’ve had many wonderful meals here, but my all time fave has to be the goat meatballs, which is not typically on the menu.  Having been to India (known for it’s holy cows)  I have had goat a number of times, it seems rare to find it gracing menus in the States.  This special offering by Chef Nicolaus Balla proves to represent the interesting and offal.  Some of the items on the menu, I have not had the courage to try yet like the Grilled Tripe, but I look forward to being more adventurous as I know we are in good hands with Chef Balla and his very accomplished staff.
